Extra Virgin Olive Oil is best used within 12-18 months from purchase. Store in a cool, dark place like a cupboard or pantry; away from heat and direct sunlight; and sealed air-tight when not in use. Correct storage will help to retain the flavour and freshness of your Olive That! products. Please do not refrigerate unless your bottles are in a warm place (ex: cottages and trailers without air conditioning in the summer). Refrigerated oils will go solid. Let thaw at room temperature, and use as normal. If your oil does go solid in extreme cold temperatures, thawing it back will not affect the quality of your product.
