What is True EVOO?
Extra virgin is the highest grade of olive oil, but the label alone means nothing. True EVOO must pass strict chemical and sensory tests. We only carry olive oils that meet those standards, every harvest.
Early Harvest & Polyphenols
The earlier the harvest, the higher the polyphenol count, and polyphenols are what give great olive oil its health benefits and bold flavour. We always display polyphenol data so you know exactly what you're getting.
How to Taste Olive Oil
Warm the oil in your hands by swirling the bottom of the cup on your palm, inhale, then sip. You're looking for fresh-cut grass, green tomato, or ripe fruit aromas followed by a peppery finish at the back of the throat. That pepper is a sign of healthy polyphenols.
Why Store Oils Fall Short
Studies show the majority of olive oils labelled "extra virgin" in grocery stores fail to meet the true standard. Oils are often blended, old, or poorly stored. We source direct from harvest and store our oils properly so what you taste is what the label says.
Pairing & Cooking with EVOO
Contrary to popular belief, high quality EVOO is perfectly suited for cooking. Match mild oils to delicate dishes and robust oils to bold flavours. The higher the polyphenols, the more heat stable the oil.
