Agrumato, Italian for fusion or fused, is the process of crushing olives and ingredients (such as chili peppers, mint, orange, etc.) at the same time, such that oils are extracted from olives and the flavouring ingredient simultaneously.

The flavours tend to be more intense (compared to the infused olive oils), with it "creeping in" almost 10-15 seconds after the initial tasting.
