What Makes Fused Olive Oils Different?

One process, a completely different result. Here's what makes fused oils unlike anything else in our collection.

The Crushing Process

The crushing process is what sets fused olive oils apart. Rather than adding flavour to a finished olive oil, fused olive oils are made by crushing hand-picked green olives and flavouring ingredients (such as chili peppers and garlic) at the same time. The simultaneous pressing, extracts oils from the olives and the flavouring ingredients creating a single, fully integrated oil.

More Intense Flavour

Because the flavour is extracted alongside the olive oil rather than added after the fact, fused olive oils carry a depth and complexity that infused oils simply can't replicate. The flavour isn't layered on top, it's woven right through the oil.

The Creeping Heat

If you've never tried a fused chili olive oil, prepare yourself. The heat doesn't hit immediately. You'll taste the olive oil first, then 10 to 15 seconds later, the warmth begins to build and linger. It's a genuinely different sensory experience. We recommend proceeding with caution, and we mean it!

1What's the difference between fused and infused olive oils?
The difference is in the process. Infused oils are made by combining a finished olive oil base with natural flavourings. Fused oils are made by crushing hand-picked green olives and flavouring ingredients together at the same time, so the oils are extracted simultaneously. The result is a more intense, fully integrated flavour that you can't achieve through infusion alone.
2Why does the heat "creep in" rather than hit right away?
It's a natural result of how the capsaicin from chili peppers interacts with your palate. The olive oil coats your mouth first, and as it settles, the heat compounds activate, typically 10 to 15 seconds after your first taste. It then lingers rather than fading quickly. It's one of the things our customers find most surprising the first time they try a spicy fused olive oil.
3How spicy are the fused oils?
Heat levels vary by variety: Spicy Green Chili has a bright, fresh heat, Peperoncino Garlic adds a garlicky depth alongside the spice, and Cayenne is the most intense of the three. The best way to find your match is to come in and taste them all.
4Are fused oils the same as chili oil?
Not quite. Traditional chili oils are often made with neutral or refined oils and dried chili flakes steeped after the fact. Our fused olive oils begin with hand-picked green olives and fresh chili peppers crushed together at the time of pressing, so you're getting true EVOO quality alongside bold, fully integrated heat.
5Do you carry any non-spicy fused oils?

6Can I cook with fused olive oils?
Absolutely. Fused olive oils are fantastic for cooking. Use them to sauté, drizzle over finished dishes, or as a dipping oil. Just like our plain Extra Virgin Olive Oils, the smoke point on these oils would range between 374°F to 405°F (190°C to 207°C), making it suitable for most everyday cooking. Just keep in mind the spice level will intensify slightly with cooking.
7How should I store my olive oil?
Keep it away from heat, light, and air. A cool dark cupboard is ideal; not next to the stove and not on a sunny countertop. Avoid storing in clear glass near windows. Our bottles are dark-tinted for a reason.
8How long does olive oil last?
A properly stored fused EVOO will last 12 to 18 months from purchase. That said, the sooner you use it the more flavour and health value you'll get from it. Our best advice? Start with a smaller bottle to see how quickly you go through it and how much you enjoy it in your everyday cooking. If it's gone fast, move up to a larger size, or just come back sooner for a fresher bottle.
9Can I taste the oils before I buy?
Absolutely! We especially recommend it for our fused olive oils! Heat tolerance is personal, and the best way to find your match is to try them all in store. We offer a guided tasting experience at both our Whitby and Markham locations so you can taste everything before you commit to a bottle. We want to make sure you'll love what you're taking home!
10Your glass bottles are really nice and it doesn't feel right to just recycle them. Do you offer refills?
We do not offer refills, and here's why. Bottles are notoriously difficult to clean thoroughly, and invisible residue or water left inside can cause a fresh oil to spoil prematurely. We want every bottle you take home to be as good as the one you tasted in store, and that means starting with a clean bottle every time. We recommend recycling your empty bottles and saving the reusable corks (they'll fit most wine or sparkling drink bottles)!
