Raspberry Mint Lemonade

Raspberry Mint Lemonade
A bright, fruity lemonade with a splash of watermelon mint rosé balsamic for a refreshing summer twist.

Ingredients
- 2 cups lemon juice
- ½ cup granulated sugar
- ¼ cup Watermelon Mint Rosé Balsamic Vinegar
- 1½ cups frozen raspberries divided
- 4 cups cold water
- Ice
- Fresh mint and lemon slices to garnish
Mint Simple Syrup
- 20-25 fresh mint leaves
- 1 cup granulated sugar
- 1 cup water
Instructions
For the mint simple syrup:
- In a small saucepan, stir together sugar, mint leaves, and water.
- Bring to a simmer over medium heat, stirring to dissolve the sugar.
- Let sit 15 minutes to infuse, then strain through a fine mesh sieve.
- Pour into an airtight container and cool in the fridge.
You can double or triple the mint syrup to keep in the fridge for another batch of lemonade or other drink recipes.
For the lemonade:
- In a blender, add lemon juice, balsamic, 1 cup of the mint simple syrup, and 1 cup frozen raspberries. Blend until combined.
- Pour through a fine mesh strainer into a pitcher. Stir in cold water, ice cubes, remaining raspberries and lemon slices. Taste and add more simple syrup (or sugar) if desired.
- Chill completely in the fridge. Top with ice and garnish with fresh mint before serving.
Notes
Want it grown up? Add a splash of vodka or gin for an adult version of this lemonade.
